What’s the job?

Cost controller primarily responsible is calculating costs of F&B items and the short and long-term planning of the F&B controlling and pricing aspects, periodically to help maintain a suitable inventory of food and beverage items for the entire hotel
Your day-to-day

People

Liaise closely with the Food & Beverage Department on various operational and cost related issues.
Assists the Director of Finance with month end procedures
Financial

Prepare the costing for recipes, menus and beverages prepared by the Executive Chef and F&D Manager and suggest the selling price.
Prepares monthly statements by collecting data; analyzing and investigating variances; summarizing data, information, and trends.
Prepare inventory variation report. To prepare cost controller’s report. To advise all concerned, raise alarms when expenses and costs are high and are not in line with revenues generated.
Perform test checking on the receipt of goods at the hotel and to see that the procedures are followed correctly.
Prepare general store issue reports on a weekly basis. To perform market surveys once in 6 months, necessary amendments should be made to the standard list of suppliers for food & beverage, in liaison with the Executive Chef, Purchasing Manager and Director of Finance.
Responsible Business

Verify daily outlet void control sheets. To verify outlet open item report to see that correct pricing has been applied and take necessary action in inputting the recurring items in the POS system.
Analyze and prepare entertainment, complimentary, employee relation & employee meals cost at month end
Perform random test counts in the Stores.
Prepare Daily Flash Report of food costs.
Minimize waste and reduce slow-moving items
Other ad-hoc duties – unexpected moments when we have to pull together to get a task done randomly test the inventory of outlets by reconciling the opening stock with the closing stock, taking account of store issues and sales.
What we need from you

Previous experience or current working experience with a minimum of 2-3 years of experience in a similar environment
Previous experience cost control function within a hotel environment.
Computer literate, with good MS Excel skills, Micros, FBM, Material Control
Good English and Russian skills are considered an advantage.
